Living in New Zealand means you don't stay in too many hotels, but when Rob's parents came to visit, we obviously spread out a bit.
One of my favorite places in New Zealand was Lake Tekapo. Unfortunately, staying right in town was prohibitively expensive, as was staying in Mt. Cook National Park.

Instead, stay in Twizel. While Lake Tekapo and Mount Cook accommodation is super pricey, Twizel is only a 10 minute detour from the Mt. Cook turnoff and accommodation there is a much better deal.
We really liked our stay at the Heartland Lodge. We had a large cozy apartment with a separate room for Rob's parents and paid $150 for the four of us. The kitchen was well stocked and there was a wood burning fireplace for atmosphere.
The place felt like a skiing cottage without the skiing. It was so cozy that we actually forgot to peek outside at night and look at the sky, which is supposedly a must-do. So do it!
